  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 teaspoons fresh lemon juice
  • 1 package of pie crust (2 in a pack)
  • 1 egg
  • 1 tablespoon water
  • 3/4 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Cook blueberries in a medium saucepan over medium heat until soft (about 9 minutes).
  2. Combine sugar, cornstarch, and salt; add to blueberries and stir until thickened (2-3 minutes). Remove from heat and stir in lemon juice.
  3. Preheat oven to 425°F (220°C) and line cookie sheets with parchment paper.
  4. Cut out 16 circles from pie dough using a cookie cutter (3.5″ diameter).
  5. Assemble hand pies by placing filling on half the circles, covering with remaining circles, and crimping edges.
  6. Brush tops with egg wash (egg mixed with water).
  7. Bake for approximately 20 minutes or until golden brown.
  8. Drizzle cooled pies with glaze made from powdered sugar and milk.
