  • 4 heirloom tomatoes, sliced
  • ½ cup cherry tomatoes, sliced
  • 8 oz feta cheese, drained and broken into pieces
  • 2 tablespoons olive oil
  • ¼ cup red apple vinegar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced shallots
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  1. In a food processor, combine garlic, shallots, oregano, parsley, black pepper, salt, and red apple vinegar. Pulse for 1–2 minutes until finely chopped.
  2. Slowly stream in the olive oil while the processor runs until fully blended.
  3. In a large bowl, add sliced heirloom and cherry tomatoes. Pour half of the vinaigrette over them and toss gently to coat.
  4. Taste and adjust seasoning with salt and pepper if necessary. Let sit at room temperature for 20 minutes before serving.
  5. Top with feta cheese pieces and garnish with fresh parsley.
