  • 8 chicken drumsticks
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound baby potatoes (halved)
  • 2 medium bell peppers (chopped)
  • 1 medium zucchini (sliced)
  • 2 medium carrots (sliced)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine 1 tablespoon olive oil, garlic powder, onion powder, dried thyme, dried rosemary, salt, and pepper. Add the chicken drumsticks and coat evenly.
  3. In another bowl, toss halved baby potatoes with the remaining tablespoon of olive oil, paprika, salt, and pepper.
  4. Spread the marinated chicken on one side of a baking sheet and the seasoned potatoes on the other.
  5. Roast in the oven for about 25 minutes.
  6. After 25 minutes, add chopped bell peppers, sliced zucchini, and carrots around the chicken and potatoes. Drizzle with additional olive oil if desired.
  7. Return to the oven for another 20 minutes until everything is cooked through and golden brown.
  8. Let rest for a few minutes before serving.
