  • 1 chopped onion
  • 2 peeled and chopped carrots
  • 2 minced garlic cloves
  • 1/4 teaspoon crushed red pepper
  • 28 oz can crushed san marzano tomatoes
  • 4 cups chicken stock
  • 1/4 cup heavy cream
  • 1 cup cooked gluten-free orzo (approximately 1/2 cup uncooked)
  • 1/4 cup torn fresh basil leaves (or 1 tablespoon dried if necessary)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes). Add chopped carrots and cook for another 5 minutes.
  2. Stir in minced garlic and crushed red pepper; cook for about 1 minute.
  3. Pour in crushed tomatoes and chicken stock. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  4. Mix in heavy cream and cooked orzo; simmer for another 5 minutes.
  5. Remove from heat, stir in torn basil leaves, and season with salt and black pepper before serving.
