  • 8 oz bowtie pasta, cooked to al dente
  • 1 english cucumber, sliced into half moons
  • 10 oz cherry tomatoes, halved
  • 1 green pepper, chopped
  • 1/2 red onion, chopped
  • 5 oz kalamata olives, halved
  • 3 tbsp fresh parsley, chopped
  • 8 oz feta cheese (or plant-based alternative), cubed
  • 1/3 cup olive oil
  • 1/3 cup water
  • 3 tbsp red apple vinegar
  • 1/2 lemon, juiced
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook 8 oz of bowtie pasta in boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, slice 1 cucumber, halve 10 oz cherry tomatoes, chop 1 green pepper and 1/2 red onion, and halve 5 oz kalamata olives.
  3. In a mixing bowl, whisk together 1/3 cup olive oil, 1/3 cup water, 3 tbsp red apple vinegar, juice of 1/2 lemon, 2 tbsp honey, 2 tsp dijon mustard, minced garlic (3 cloves), salt (1 tsp), black pepper (1/2 tsp), chopped parsley (2 tbsp), and dill (1 tbsp).
  4. In a large bowl, combine the cooked pasta with all prepared vegetables and feta cheese. Pour the vinaigrette over the top and gently toss to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
