  • ½ pound thinly sliced beef ribeye or chuck eye
  • ½ large yellow onion, thinly sliced
  • ½ cup water
  • 4 tablespoons fruit juice (replace mirin)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon granulated sugar
  • ¼ teaspoon hondashi powder
  • 2 cups cooked white rice (hot)
  • Optional: plant-based egg substitute, pickled red ginger, green onions

Instructions

  1. In a non-stick saucepan, combine water, fruit juice, soy sauce, sugar, and hondashi powder. Stir in sliced onions.
  2. Cover and simmer over medium heat until the mixture melds.
  3. Lay the thinly sliced beef on top of the onions and cook until no longer pink—about a few minutes.
  4. Serve the beef and onion mix over hot rice and drizzle with sauce.
  5. Garnish as desired with plant-based egg substitute, pickled ginger, and green onions.
