  • 2 lbs semi-firm tomatoes (Roma or Heirloom)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 24 cloves garlic (minced)
  • 23 tablespoons fresh oregano (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Core and halve the tomatoes using a sharp knife.
  3. In a mixing bowl, combine olive oil, balsamic vinegar, minced garlic, chopped oregano, salt, and pepper.
  4. Gently toss halved tomatoes in the marinade until well coated.
  5. Place tomatoes cut-side down on the greased grill and cook for 5-7 minutes.
  6. Flip the tomatoes carefully and grill until tender but not collapsing.
  7. Serve warm or at room temperature.
