  • 3 medium sweet potatoes, peeled and cut into wedges
  • 2 tablespoons extra-virgin olive oil
  • 1½ teaspoons kosher salt
  • ¾ cup Greek yogurt
  • 4 green onions, chopped
  • ¼ cup fresh dill
  • 2 garlic cloves, smashed
  • 10 large fresh basil leaves
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, toss sweet potato wedges with olive oil and salt until well-coated.
  3. Place sweet potatoes cut side down on the grill and cook for about 15 minutes, turning every 2-3 minutes until fork-tender.
  4. While grilling, blend Greek yogurt, green onions, dill, garlic, basil, lemon juice, and remaining salt in a blender until smooth.
  5. Serve grilled sweet potatoes on a platter drizzled with yogurt dressing and garnish with fresh dill.
