  • 1 pound skirt steak
  • 8 corn tortillas
  • 1/2 cup Cotija cheese
  • Lime juice
  • Fresh cilantro
  • Ancho chili powder

Instructions

  1. Season the skirt steak with kosher salt and cumin.
  2. Grill the corn over medium-high heat until slightly charred (about 10 minutes).
  3. Cut the grilled corn off the cob and mix with mayonnaise, cilantro, ancho chili powder, lime juice, and salt.
  4. Increase grill temperature to high and cook the skirt steak for 1.5 to 2 minutes per side for medium-rare.
  5. Grill tortillas for 30 to 60 seconds on each side until charred.
  6. Assemble tacos by slicing the steak and layering it on tortillas with elote mixture, Cotija cheese, cilantro, and lime wedges.
