  • 4 portions (8 oz each) Mahi Mahi
  • ½ fresh pineapple
  • 1 medium red bell pepper
  • ½ medium red onion
  • ½ bunch cilantro
  • 1 medium serrano pepper
  • 2 tbsp lemon juice
  • ½ cup butter
  • Salt and pepper

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush pineapple slices with olive oil and grill for 3-4 minutes per side until charred; chop into small pieces.
  3. In a mixing bowl, combine grilled pineapple, diced bell pepper, onion, cilantro, serrano pepper, lemon juice, vinegar, cumin, salt, and pepper.
  4. Season Mahi Mahi with salt and pepper on both sides.
  5. Melt butter in a skillet or grill pan over medium-high heat; grill fish for 4-5 minutes on each side until flaky.
  6. Serve the grilled fish topped with pineapple salsa and garnish with chopped parsley.
