Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 (15 oz) can pineapple slices (with juice)
  • 2 teaspoons soy sauce
  • 1 teaspoon garlic
  • 1 red bell pepper (cubed)
  • 2 medium zucchinis (sliced)
  • Green onions (for garnish)

Instructions

  1. Preheat your grill to medium heat and cut four large sheets of heavy-duty aluminum foil.
  2. In the center of each foil sheet, place one chicken breast. Top with cubed bell peppers, sliced zucchini, and 2-3 pineapple slices.
  3. In a bowl, mix together barbecue sauce, pineapple juice, soy sauce, and garlic. Spread about 2 tablespoons over each chicken breast and reserve some sauce for basting later.
  4. Fold the foil packets securely to prevent leaks and place them on the grill. Cook for 13-15 minutes, flipping halfway through.
  5. After cooking, carefully open each packet; baste with reserved sauce and garnish with green onions before serving.
