  • 1 large piece of flank steak
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder
  • 2 tsp lime zest (optional)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix together lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest until well combined.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal and massage to coat evenly. Refrigerate for at least 8 hours or up to 24 hours.
  3. Remove the steak from the fridge about 30 minutes before grilling to let it come to room temperature.
  4. Preheat your grill to medium-high heat.
  5. Grill the steak for approximately 4-5 minutes per side for medium rare or longer for desired doneness (aim for an internal temperature of 140-145°F).
  6. Let the steak rest for 5 minutes before slicing against the grain into thin strips.
