  • 2 large heads cauliflower
  • ¼ cup olive oil
  • 2 limes (zest 1, juice both)
  • 1 tbsp honey
  • 2 tbsp guajillo or chili powder
  • 1 tbsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp ground cumin

Instructions

  1. Preheat your grill to 425°F (218°C).
  2. Remove leaves from the cauliflower and trim the stem. Slice into ¾-inch steaks.
  3. In a mixing bowl, whisk together lime zest, lime juice, olive oil, honey, guajillo powder, chipotle powder, garlic powder, salt, and cumin until well combined.
  4. Brush the marinade generously over each steak and place on the grill.
  5. Grill for about 5 minutes per side until tender and slightly charred.
