1 chicken breast (grilled and sliced)
1 medium carrot (peeled and chopped)
45 baby potatoes (halved)
A handful of cherry tomatoes
1 cup baby spinach
1 lemon wedge
1 tsp olive oil
Salt, black pepper, garlic powder to taste
Instructions
Boil or steam the carrots and baby potatoes until fork-tender (about 8-10 minutes). Toss with salt and set aside.
Season the chicken breast with salt, black pepper, and garlic powder. Grill or pan-sear for about 5-6 minutes per side until golden brown. Slice into strips.
Assemble the bowl by layering baby spinach at the base, adding cooked vegetables and cherry tomatoes on top, followed by the sliced chicken.
Squeeze fresh lemon juice over the bowl and drizzle lightly with olive oil before serving.
