  • 2 boneless, skinless chicken breasts
  • Salt, pepper, and Italian seasoning
  • 1 tablespoon olive oil
  • ¼ cup basil pesto
  • 4 slices fresh mozzarella cheese
  • 4 slices sourdough or ciabatta bread
  • Butter or olive oil for toasting

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning. Grill over medium heat for 6–7 minutes per side until fully cooked. Let rest before slicing.
  2. Spread basil pesto on one side of each bread slice. Layer sliced chicken and mozzarella on two slices (pesto-side up), then top with remaining slices (pesto-side down).
  3. Brush outer sides with butter or olive oil and grill in a skillet or panini press on medium heat for 3–4 minutes per side until golden brown and cheese is melted.
  4. Slice sandwiches diagonally and serve warm.
