  • 4 large boneless skin-on chicken breast halves
  • 3 tablespoons finely minced garlic
  • 1 teaspoon kosher salt
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil
  • Fresh parsley for garnish

Instructions

  1. In a small bowl, combine garlic, salt, basil, and olive oil until it reaches a paste-like consistency.
  2. Rub the marinade on both sides of the chicken breasts and place them in a gallon zip lock bag. Refrigerate for 4 to 12 hours.
  3. Preheat your grill to medium heat. Remove chicken from the marinade, wipe excess off the skin, brush with olive oil, and season with salt and pepper.
  4. Grill skin-side down for 8-10 minutes; turn 90 degrees halfway through for grill marks.
  5. Flip the chicken and transfer to a cooler side of the grill; cover and cook for another 8-10 minutes until internal temperature reaches 155°F.
  6. Let rest for 5 minutes before serving.
