- 1 lb ground lamb (or all beef)
- 1 large onion
- 6 garlic cloves
- 2 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tsp dried rosemary
- 2 tsp dried marjoram
- 2 tsp cumin
- 3 tsp salt
- 2 tsp black pepper
- Oil for cooking
- Pitas
- Lettuce (sliced)
- Tzatziki
- Tomatoes (sliced)
- Red onions (sliced)
- Feta cheese (crumbled)
- In a food processor, puree onion and garlic until smooth.
- Combine pureed mixture with ground meats and spices in a stand mixer or bowl; mix until well combined.
- Refrigerate the meat mixture for 2 hours to overnight for enhanced flavor (optional).
- Preheat oven to 325°F.
- Shape the meat into a log on a foil-lined baking tray; insert a skewer through the center.
- Wrap the meat in foil and bake for about 1.5 hours or until the internal temperature reaches 160°F.
- Let rest for 5 minutes before slicing thinly.
- Sauté slices in oil over medium-high heat until crispy.
- Assemble gyros by spreading tzatziki on pitas and adding toppings.
