Ingredients

  • 1 lb ground beef
  • 1 lb ground lamb (or all beef)
  • 1 large onion
  • 6 garlic cloves
  • 2 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tsp dried rosemary
  • 2 tsp dried marjoram
  • 2 tsp cumin
  • 3 tsp salt
  • 2 tsp black pepper
  • Oil for cooking
  • Pitas
  • Lettuce (sliced)
  • Tzatziki
  • Tomatoes (sliced)
  • Red onions (sliced)
  • Feta cheese (crumbled)

Instructions

  1. In a food processor, puree onion and garlic until smooth.
  2. Combine pureed mixture with ground meats and spices in a stand mixer or bowl; mix until well combined.
  3. Refrigerate the meat mixture for 2 hours to overnight for enhanced flavor (optional).
  4. Preheat oven to 325°F.
  5. Shape the meat into a log on a foil-lined baking tray; insert a skewer through the center.
  6. Wrap the meat in foil and bake for about 1.5 hours or until the internal temperature reaches 160°F.
  7. Let rest for 5 minutes before slicing thinly.
  8. Sauté slices in oil over medium-high heat until crispy.
  9. Assemble gyros by spreading tzatziki on pitas and adding toppings.
