  • 1 large bulb of garlic
  • Olive oil (as needed)
  • 1.3 kg baking potatoes
  • 75 g butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60 g freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 180C/356F. Slice off the tip of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft.
  2. Peel and dice the baking potatoes, boil in salted water until fork-tender, then drain and let steam dry.
  3. Mash the potatoes with butter and cream, then mix in roasted garlic and Parmesan cheese until smooth. Season with salt and pepper before adding egg yolks.
  4. Pipe the mixture into swirls on a lined baking tray.
  5. Drizzle with melted butter and bake at 200C/400F for 15-20 minutes until golden brown.
