  • 4 boneless, skinless chicken breasts
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine minced garlic, 2 tablespoons olive oil, thyme, rosemary, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for about 10 minutes.
  4. Toss halved baby potatoes with 1 tablespoon olive oil and season with salt and pepper on a baking sheet.
  5. Place marinated chicken breasts on top of the potatoes.
  6. Roast in the oven for about 25 minutes.
  7. Add trimmed green beans around the chicken and potatoes; drizzle with olive oil and season.
  8. Continue roasting for an additional 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  9. Let rest for a few minutes before serving.
