  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 8 oz mushrooms (cremini or button), sliced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Prepare all ingredients: Chop vegetables and cut the beef into pieces.
  2. Sear the beef in a Dutch oven over medium-high heat with olive oil until browned on all sides; remove and set aside.
  3. In the same pot, cook onions and carrots until softened; add garlic and cook for another minute.
  4. Return the beef to the pot with mushrooms, broth, tomato paste, thyme, and bay leaf; stir well.
  5. Bring to a boil; reduce heat to low and cover. Simmer gently for about 2 hours until the beef is tender.
  6. Remove bay leaf before serving; enjoy warm.
