Fall Harvest Salad is a vibrant celebration of autumn flavors, perfect for gatherings or as a satisfying main course. This delightful dish features roasted sweet potatoes, tender chicken, crisp apples, and crunchy pumpkin seeds, all tossed together with a creamy orange vinaigrette. Whether you’re hosting a festive meal or simply looking for a nutritious lunch option, this salad offers a delicious mix of textures and tastes that everyone will love.

  • 2 cups diced sweet potatoes (8 ounces)
  • 1/2 tablespoon olive oil
  • 6 cups mixed greens, roughly chopped (180 grams)
  • 1 1/2 cups shredded chicken (6 ounces)
  • 1 cup diced apple (100 grams)
  • 2 tablespoons dried cranberries
  • 2 tablespoons pumpkin seeds/pepitas (I used roasted)
  • 1/4 cup orange vinaigrette

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 25-35 minutes until fork-tender.
  2. While roasting, prepare the creamy orange vinaigrette by mixing olive oil, fresh orange juice, vinegar, honey or maple syrup, salt, and pepper in a jar. Shake well.
  3. Chop mixed greens and dice apples into bite-sized pieces.
  4. In a large mixing bowl, combine roasted sweet potatoes, mixed greens, shredded chicken, diced apples, pumpkin seeds, dried cranberries. Pour dressing over and toss gently.
  5. Serve immediately or refrigerate until ready to enjoy.
