  2. In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
  3. Place the mixing bowl over the simmering water and whisk continuously for 20-25 minutes until thickened.
  4. Strain the mixture through a fine mesh sieve into a glass bowl to ensure smoothness.
  5. To prevent film formation, cover with plastic wrap directly on the warm curd.
  6. Allow cooling at room temperature before refrigerating for at least four hours or overnight.
