  • 1 cup fine bulgur
  • 2 cups boiling water
  • 3 cups curly parsley (minced)
  • 3/4 cup green onion (chopped)
  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup lemon juice (fresh squeezed)
  • 1 1/2 teaspoon kosher salt

Instructions

  1. In a large bowl, combine bulgur and boiling water. Let it soak for at least 30 minutes.
  2. While bulgur soaks, chop green onions, mince parsley and mint, and dice tomatoes.
  3. In a separate bowl, whisk together olive oil, lemon juice, and salt until well combined.
  4. After soaking, drain the bulgur using a colander lined with a cloth to remove excess water.
  5. Combine the drained bulgur with chopped vegetables and herbs in a large bowl.
  6. Pour the vinaigrette over the mixture and toss until everything is evenly coated.
  7. Serve chilled or at room temperature with lemon wedges on the side.
