  • 1 large sweet onion
  • 1 large red bell pepper
  • 1/2 cup Italian salad dressing

Instructions

  1. Cut the zucchini in half lengthwise and then into pieces about 2 inches thick.
  2. Slice the onion into similar-sized pieces after peeling.
  3. Cut the bell pepper into pieces that match the size of the zucchini and onion.
  4. Place all chopped vegetables in a Ziploc bag with Italian dressing.
  5. Marinate in the fridge for 4-6 hours.
  6. Preheat your grill over medium-high heat.
  7. Drain excess marinade from vegetables before placing them on a grill pan.
  8. Grill vegetables for about 15-20 minutes, turning every five minutes until tender but slightly crisp with charred edges.
  9. Season with salt and pepper to taste before serving hot.
