  • 4 potatoes
  • 500 g (1 lb) chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • 1 onion (finely chopped)
  • 3 garlic cloves (crushed)
  • 1 cup chicken stock
  • 1 cup cream
  • 3 tsp Dijon mustard
  • 12 tsp lemon juice
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Peel and cube the potatoes, then toss them in olive oil, salt, and pepper. Spread on a large sheet pan.
  3. Roast the potatoes for about 30 minutes until golden brown.
  4. Flatten the chicken breasts between parchment paper using a meat mallet.
  5. Season the chicken with olive oil, salt, pepper, and oregano.
  6. Sear the chicken in a heated deep pan for about 2-3 minutes on each side until golden.
  7. In the same pan, sauté onion and garlic until fragrant, then add chicken stock and simmer for a few minutes.
  8. Stir in cream and Dijon mustard; let it thicken slightly.
  9. Add lemon juice and return the chicken to the sauce; cook for an additional 5 minutes.
  10. Serve hot, garnished with fresh parsley alongside the roasted potatoes.
