  • 5 pounds chuck roast
  • 1/2 large white onion
  • 3 garlic cloves
  • 3 large bay leaves
  • 1/2 tablespoon salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon cumin
  • 1/2 tablespoon dried oregano
  • 7 ounces chipotle sauce
  • 1 cup beef broth
  • 12 6-inch corn tortillas
  • 3 tablespoons avocado oil
  • 3 cups shredded Monterey Jack cheese
  • 1/2 cup pico de gallo
  • 2 tablespoons cilantro (chopped)
  • 2 small limes (cut into wedges)

Instructions

  1. Place the chuck roast in a slow cooker. Add the onion pieces, garlic cloves, bay leaves, salt, garlic powder, onion powder, cumin, oregano, chipotle sauce, and beef broth. Stir to combine all ingredients well.
  2. Cover your slow cooker and set it on low. Cook for about 4 hours or until the beef is tender enough to shred easily with forks. Check occasionally to ensure it’s cooking evenly.
  3. Once cooked, remove the beef from the slow cooker. Let it cool slightly before shredding using two forks. Discard any excess fat or bay leaves from the mixture.
  4. Heat avocado oil in a skillet over medium heat. Dip each corn tortilla into the braising broth from your slow cooker briefly to soak up flavor. Place them in the skillet one by one.
  5. On half of each tortilla, add shredded beef and a generous amount of Monterey Jack cheese. Fold over to create a taco shape. Fry each side until golden brown and crispy. Repeat for all tortillas.
  6. Serve your Easy Birria Tacos hot with pico de gallo on top and lime wedges on the side for squeezing over.
