  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup unsalted butter, softened
  • ½ cup heavy cream
  • 2 egg yolks
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing the baking sheet)

Instructions

  1. Boil the cubed russet potatoes in a large pot of salted water until fork-tender, about 15–20 minutes. Drain well.
  2. Mash the drained potatoes using a potato masher or ricer until smooth and free of lumps.
  3. In a mixing bowl, combine the mashed potatoes with softened butter, heavy cream, egg yolks, garlic powder, onion powder, salt, and pepper. Mix until fluffy.
  4. Preheat the oven to 400°F (200°C) and grease a baking sheet with olive oil.
  5. Transfer the potato mixture into a piping bag fitted with a star tip and pipe small mounds onto the prepared baking sheet.
  6. Bake for about 20 minutes or until golden brown on top.
