  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha (or hot sauce)
  • Salt and pepper to taste

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Drain and rinse under cool water.
  2. In a mixing bowl, combine the cooked pasta with half of the dill pickle juice and let sit for 5 minutes before draining again.
  3. Prepare the dressing by mixing together mayonnaise, sour cream, remaining dill pickle juice, Sriracha, salt, and pepper in another bowl until smooth.
  4. In a large bowl, combine marinated pasta with diced cheese, sliced pickles, chopped dill, and finely chopped onion. Mix well with the dressing until everything is evenly coated.
  5. Chill in the refrigerator for 4-6 hours before serving.
