  • 1/2 cup mayonnaise

  • 1/4 cup sweet pickle relish

  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

Instructions

  1. Cook the potatoes in a large saucepan covered by water and salt until fork-tender (about 12 minutes). Drain and cool slightly.
  2. Cut each potato in half lengthwise and scoop out the centers while leaving a thin border.
  3. Mash the scooped potato flesh and mix it with mayonnaise, mustard, relish, green onions, pepper, and salt.
  4. Spoon or pipe the filling into each potato shell. Sprinkle with paprika and garnish with chives if desired.
