  • 1 lb Ground Beef
  • 6 Oz Onion, Chopped
  • 7 Oz Carrots, Slivered
  • 7 Oz Celery, Diced
  • 24 Oz Canned Diced Tomatoes
  • 2 Cups Red Kidney Beans, Cooked
  • 2 Cups White Kidney Beans, Cooked
  • 44 Oz Beef Stock
  • 11/2 Tsp Oregano
  • 11/4 Tsp Fresh Black Pepper
  • 1 Tbsp Fresh Flat-Leaf Parsley
  • 1 Tsp Tabasco-Type Hot Sauce
  • 24 Oz Marinara Sauce
  • 4 Oz Dry Small Pasta (Shells, Elbows, Or Other)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef, cooking until browned and crumbled.
  3. Stir in chopped onion, slivered carrots, and diced celery; sauté until slightly tender.
  4. Mix in canned diced tomatoes with juices; combine well.
  5. Add cooked red and white kidney beans; stir to blend.
