  • 8 lasagna noodles
  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 cups shredded mozzarella cheese
  • 1 cup heavy cream
  • 3 cloves minced garlic
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick spray.
  2. Cook lasagna noodles according to package instructions until al dente; drain carefully.
  3. In a skillet, cook seasoned chicken breasts over medium heat until golden brown (6-7 minutes per side), then shred.
  4. Melt butter in a saucepan over medium heat; sauté minced garlic for about one minute. Stir in heavy cream and simmer before adding Parmesan cheese until melted.
  5. Spread some Alfredo sauce at the bottom of the baking dish. Fill each noodle with ricotta cheese, shredded chicken, and spinach; roll tightly and place seam-side down in the dish.
  6. Pour remaining Alfredo sauce over rolls, top with mozzarella cheese, and bake uncovered for 25-30 minutes until bubbly.
