  • 6 tablespoons melted salted butter
  • 16 ounces softened cream cheese
  • 3/4 cup granulated sugar
  • 1 teaspoon coffee extract
  • 3 large eggs (room temperature)
  • 1 cup heavy cream (or non-dairy alternative)
  • 1/2 cup cold brew coffee
  • 1 tablespoon lemon juice (or vinegar)
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour (optional for gluten-free)
  • 8 ounces chopped bittersweet chocolate
  • 1 cup heavy cream (for ganache)

  • 1 packet instant cheesecake pudding mix (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix crushed Oreos with melted butter and optional espresso powder. Press into the bottom of a springform pan and bake for 10 minutes; let cool.
  2. In another bowl, beat together softened cream cheese and sugar until smooth. Add coffee extract, eggs one at a time, heavy cream, cold brew coffee, lemon juice, salt, and flour if using. Mix until creamy.
  3. Pour the filling onto the cooled crust and bake for 70-75 minutes until set around the edges but slightly wobbly in the center. Cool in the oven for one hour.
  4. For the ganache, heat heavy cream until simmering; pour over chopped chocolate and mix until smooth. Spread over cooled cheesecake.
  5. Chill for at least 4 hours or overnight before serving.
