  • 3 large gold potatoes (peeled and diced)
  • 30 oz can pinto beans (rinsed and drained)
  • 15 oz can whole kernel corn (drained)
  • 15 oz can diced tomatoes (undrained)
  • 2 cups beef broth
  • Smoked paprika
  • Onion powder
  • Kosher salt
  • Ground black pepper
  • Freshly chopped parsley (for garnish)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef, crumbling it as it cooks. Add diced onions and minced garlic, cooking for another two minutes before removing from heat.
  2. Transfer the beef mixture to the slow cooker and add all remaining ingredients except for garnish.
  3. Cover the slow cooker and cook on high for 3–4 hours or low for 6–8 hours until vegetables are tender.
  4. Once cooked, garnish with freshly chopped parsley before serving hot.
