  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and transfer to a slow cooker.
  2. Sauté the diced onion and minced garlic in the same skillet for about 2-3 minutes until softened; add to the slow cooker.
  3. Combine beef broth, potatoes, carrots, celery, diced tomatoes (with juices), Worcestershire sauce, dried basil, oregano, salt, and pepper in the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  5. About 30 minutes before serving, stir in shredded cheddar cheese and heavy cream until melted and creamy.
  6. Season to taste with salt and pepper before serving with desired toppings.
