  • 1.52 lbs fresh green beans (trimmed and cut into 2–3" pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb chicken sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon pepper

Instructions

  1. Begin by adding halved potatoes to a large crock pot. Sprinkle with pepper and half of the Cajun seasoning.
  2. Place the stick of butter on top of the potatoes to melt during cooking.
  3. Layer green beans and diced onion over the potatoes, sprinkling remaining Cajun seasoning on top.
  4. Add sliced chicken sausage as the final layer.
  5. Cover the crock pot and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once each hour.
  6. Before serving, taste and adjust seasoning if needed.
