  • 2 tsp Italian seasoning
  • Salt and pepper
  • 1 tbsp unsalted butter
  • 1 tsp olive oil
  • ½ cup white apple vinegar + ½ cup water or 1 cup chicken broth
  • 4 tbsp diced sun-dried tomatoes
  • 1 tsp sweet paprika
  • 1 tsp garlic granules
  • 1 tsp chicken bouillon
  • 1 cup sour cream or heavy cream
  • 1 tbsp cornstarch, diluted in 2 tbsp cold water (optional)
  • 23 tbsp grated Parmesan cheese
  • 2 tbsp flat leaf parsley or fresh basil, chopped

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Optional: In a skillet, heat butter and olive oil over medium heat. Brown the chicken on both sides until golden.
  3. Place the chicken in the slow cooker. Combine vinegar (or broth), paprika, garlic granules, and sun-dried tomatoes; pour over the chicken.
  4. Cover and cook on LOW for 90 minutes to 2 hours until chicken reaches an internal temperature of 165°F (75°C).
  5. Stir in sour cream (or heavy cream) and Parmesan cheese just before serving.
  6. Serve over pasta, rice, or mashed potatoes.
