  • 2 garlic cloves, minced
  • 1-inch piece ginger, minced
  • 1 green chili, chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)
  • Vegetable oil (for deep frying)

Instructions

  1. Prepare the dough by mixing flour and salt in a bowl. Add vegetable oil and gradually incorporate water until a firm dough forms. Cover and let rest for 30 minutes.
  2. For the filling, heat vegetable oil in a frying pan over medium heat. Sauté onion, garlic, ginger, and optional green chili until soft. Add spices and cook briefly before incorporating potatoes and peas. Season with salt and lemon juice; let cool.
  3. Divide the rested dough into small balls and roll each into thin circles. Cut in half to form cones, fill with the mixture, and seal edges tightly.
  4. Heat vegetable oil in a pan for deep frying. Fry samosas until golden brown (about 4–5 minutes per batch). Drain on paper towels before serving.
