  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 3/4 cup fresh orange juice
  • 1/2 cup castor sugar (for sauce)
  • Thinly sliced orange peel

Instructions

  1. In a mixing bowl, whisk together flour, granulated sugar, and salt. Add eggs, vanilla extract, milk, and water; mix until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat; melt 1 tablespoon of butter. Pour about 1/4 cup of batter into the skillet, tilting to spread evenly. Cook for 1-2 minutes until edges lift; flip and cook for another minute. Repeat with remaining batter.
  3. For the sauce, melt castor sugar and butter in a pan over medium heat. Stir in sliced orange peel and fresh orange juice; simmer for about 5 minutes until slightly thickened.
  4. Fold each crepe into quarters and place them in the warm orange sauce to soak briefly before serving.
