Creamy Veggie White Lasagna is a comforting and indulgent dish that brings together layers of vibrant vegetables, a luscious béchamel sauce, and melty cheese. Ideal for any gathering, this vegetarian delight caters to all taste buds, making it perfect for family dinners or special occasions.

Ingredients

  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • Butter or alternative for béchamel sauce
  • Flour
  • Milk
  • Salt and pepper

Instructions

  1. In a saucepan over medium heat, melt butter (or an alternative). Add flour to create a roux, stirring continuously until golden brown.
  2. Gradually whisk in milk until the sauce thickens, seasoning with salt and pepper.
  3. Preheat your oven to 375°F (190°C). Spread a thin layer of béchamel sauce in a 9×13 inch baking dish.
  4. Layer half the chopped spinach, then one cup of mozzarella cheese, followed by another layer of béchamel sauce.
  5. Repeat with remaining spinach and cheese.
  6. Top with grated Parmesan cheese, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
  7. Allow to cool for 10 minutes before slicing.
