  • 2 boneless, skinless chicken breasts
  • 2 medium Yukon Gold potatoes
  • ¼ cup sun-dried tomatoes (oil-packed)
  • ¼ cup fresh basil leaves
  • 2 tbsp heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • Salt & freshly cracked black pepper to taste
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed potatoes in olive oil, rosemary, garlic, salt, and pepper; roast for 20–25 minutes until crispy.
  2. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add chicken pieces seasoned with oregano, salt, and pepper; cook for 5–7 minutes until golden brown.
  3. Blend sun-dried tomatoes, basil, Parmesan cheese, garlic, lemon juice, and heavy cream in a food processor until smooth; season to taste.
  4. Serve the roasted potatoes topped with the garlic-butter chicken and drizzle generously with the creamy pesto.
