  • 450g chicken sausage
  • 1 onion
  • 5 garlic cloves
  • 2 heaping tbsp tomato paste
  • 28 oz canned tomatoes
  • 4 cups beef broth
  • 1 cup heavy cream
  • 810 sheets lasagna
  • 1 tbsp fresh parsley
  • 1 tbsp fresh oregano
  • 1 tbsp fresh basil
  • 3/4 cup ricotta
  • 1/2 cup mozzarella
  • 1/4 cup parmesan
  • salt & pepper (to taste)
  • Italian seasoning (to taste)

Instructions

  1. Dice the onion and mince the garlic; set aside.
  2. In a large pot over medium heat, brown the chicken sausage until golden. Remove and set aside.
  3. Sauté the diced onion until translucent; add minced garlic and red pepper flakes for another minute.
  4. Stir in tomato paste and canned tomatoes; cook until mostly smooth.
  5. Pour in beef broth; bring to a boil.
  6. Break lasagna sheets into pieces and add to the pot. Cook until al dente.
  7. Mix in heavy cream and return to simmer.
  8. Add back the browned sausage along with fresh herbs; stir well.
  9. In a separate bowl, combine ricotta, mozzarella, parmesan, seasoning as desired.
  10. Serve soup topped with cheese mixture and garnish with fresh herbs.
