  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  2. Season chicken pieces with Cajun seasoning, Italian seasoning, salt, and pepper. Sear in a skillet with olive oil over medium-high heat for about 4-5 minutes per side until golden brown.
  3. In the same skillet, lower the heat and add butter and minced garlic; sauté until fragrant.
  4. Stir in heavy cream and Velveeta until melted. Add mozzarella and Parmesan; stir until thickened. Adjust consistency with reserved pasta water as needed.
  5. Toss the cooked rotini in the sauce and simmer for an additional 2 minutes.
  6. Plate by serving creamy rotini alongside seared chicken; garnish with fresh parsley.
