  • 1 tbsp coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • 2 cups all-purpose flour (for naan)
  • 2 tsp baking powder (for naan)
  • 1/2 tsp salt (for naan)
  • 3/4 cup plain yogurt (for naan)

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add onions and sauté until soft.
  2. Stir in garlic and ginger; cook until fragrant.
  3. Add beef cubes; brown on all sides.
  4. Mix in cumin, coriander, turmeric, smoked paprika, chili powder, and garam masala.
  5. Pour in diced tomatoes with their juice; stir well.
  6. Add chickpeas and coconut milk; season with salt and pepper.
  7. Bring to a simmer, cover, and cook for about 30 minutes until beef is tender.
  8. For the naan: Combine flour, baking powder, salt, and yogurt in a bowl; mix into a dough.
  9. Roll out dough into rounds; cook each side in a hot skillet until golden brown.
