Cranberry Linzer Cookies are a festive and delightful treat that combines soft almond cookies with a tangy cranberry jam filling, making them perfect for holiday gatherings or cozy winter evenings.

  • 300 g cranberries (fresh or frozen)
  • 150 g granulated sugar (for jam)
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 1/2 teaspoon salt
  • 230 g unsalted butter (softened)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • powdered sugar (for dusting)

Instructions

  1. Prepare the cranberry jam by cooking cranberries, granulated sugar, and water in a saucepan over medium heat until thickened. Let cool.
  2. For the cookie dough, cream softened butter with sugars, then add eggs one at a time and stir in vanilla.
  3. Combine all-purpose flour, almond flour, and salt in another bowl, then mix with the wet ingredients. Fold in finely chopped dried cranberries.
  4. Chill dough discs wrapped in plastic for at least 30 minutes.
  5. Roll out chilled dough, cut into shapes, and bake at 350°F (175°C) for 10-12 minutes until lightly golden.
  6. Assemble cookies by spreading cranberry jam on half of the cooled cookies and topping with others. Dust with powdered sugar before serving.
