  • 120 g white crab meat
  • 120 g mixed crab meat
  • 3 tbsp cream cheese
  • 3 tbsp crème fraîche
  • 1 tbsp lemon juice
  • 1 spring onion, finely chopped
  • 1 cup grated cheddar cheese
  • 1/2 tsp coarse sea salt
  • 1/4 tsp ground black pepper
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs

Instructions

  1. In a large mixing bowl, combine crab meats, cream cheese, crème fraîche, cheddar cheese, spring onion, lemon juice, salt, and pepper until well blended.
  2. With wet hands, form the mixture into golf ball-sized balls and pack them firmly.
  3. Coat each ball in flour, dip into beaten eggs, then roll in breadcrumbs.
  4. Chill the formed balls on a tray in the refrigerator for 15–20 minutes to help them hold their shape during frying.
  5. Heat oil in a frying pan over medium heat and fry the balls in batches until golden brown (about 3–4 minutes per side).
  6. Drain on paper towels before serving warm or cold.
