  • 6 cups low-sodium chicken broth
  • 1 tsp agar-agar powder (optional for thickness)
  • 2 tbsp fresh dill or parsley (chopped for garnish)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened (about 5 minutes).
  2. Add chicken thighs and minced garlic; cook until lightly browned on all sides (approximately 6 minutes).
  3. Pour in chicken broth to cover ingredients; bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes.
