  • 32 ounces Southern-style frozen hash brown potatoes, thawed
  • pounds deli corned beef, roughly chopped
  • 6 large eggs
  • 2 cups milk
  • 1½ teaspoon salt, divided
  • ¾ teaspoon pepper, divided
  • ¾ teaspoon ground thyme
  • 1 teaspoon garlic powder
  • 2 teaspoons dry mustard
  • 1/8 teaspoon cayenne

Instructions

  1. Preheat the oven to 350°F.
  2. In a large oven-safe skillet, melt butter over medium heat and sauté chopped onion until translucent (3–5 minutes).
  3. Add olive oil and hash browns; cook until browned.
