  • 1 cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • Fresh parsley and basil
  • Dressing: olive oil
  • red apple vinegar
  • lemon juice
  • honey
  • minced garlic
  • salt
  • pepper

Instructions

  1. Prepare the dressing by whisking together olive oil, vinegar, lemon juice, honey, garlic, salt, and pepper in a bowl; refrigerate.
  2. Boil water in a large pot; prepare ice water nearby.
  3. Cook shucked corn for 2-3 minutes; transfer immediately to ice water to cool.
  4. Cut kernels from cooled corn into a mixing bowl.
  5. Add tomatoes, cucumber, onion, feta, parsley, and basil; mix well.
  6. Pour dressing over the salad; toss until evenly coated.
