  • 8 oz orecchiette pasta
  • 1 cup cooked corn kernels
  • 1 diced red bell pepper
  • 4 slices cooked turkey sliced
  • Fresh cilantro, chopped
  • Salt and pepper to taste
  • 1/3 cup basil pesto
  • 3 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Cook the orecchiette pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Dice the red bell pepper and chop the cilantro.
  3. Cook turkey in a skillet until crispy; let cool slightly before slicing.
  4. In a bowl, whisk together basil pesto, Greek yogurt, mayonnaise, and lime juice to create the dressing.
