Ingredients

Scale
  • 1 tbsp olive oil
  • 6 sausages (about 14 oz total, any flavor)
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice (about 3.5 oz)
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half-and-half (12.5 fl oz)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, celery, carrots, and garlic; sauté until tender (about 5 minutes).
  2. Add sausages and cook until browned on all sides. Slice them into rounds and return to the pot.
  3. Stir in thyme and sprinkle flour over the mixture; stir well.
  4. Gradually pour in broth while stirring to avoid lumps. Add bay leaves and wild rice; bring to a boil.
  5. Add potatoes once boiling, reduce heat to low, cover, and simmer for about 30–35 minutes until rice is tender.
  6. Remove bay leaves, stir in cream or half-and-half, and season with salt before serving.
